A FEW OF MY FAVORITES

"Clams Casino

12- raw clams on half shell

2-slices raw bacon cut into 12 pieces

1/2-stick butter, melted

1-6 oz can crab meat, drained

12- slices pimientos

1-tsp paprika

salt & pepper to taste


First, pour melted butter over raw clams, then add crabmeat, pimiento, bacon, then add seasonings. bake in pre-heated oven at 450 for about 15 minutes, or until bacon is browned and crispy. Serve as is or with a side of cocktail sauce or extra melted butter for dipping.  ENJOY!!



Pan Fried Lobster

2- 8 oz lobster tails

1-cup flour

2-eggs

2- oz milk

1-cup bread crumbs

2-cups olive oil

3-cloves garlic, minced

2-tsp crushed mint or 4 fresh mint leaves finely chopped

4-tbsp butter

1-cup dry sherry

6-mushrooms, sliced

4-slices onion, chopped

6-leaves fresh tarragon, chopped, or 2-tsp dried tarragon

1-whole lime

10-grape tomatoes, halved

2-tbsp sliced pimientos


Cut rouned part of tail lengthwise and pull meat out of the shell. beat the eggs with mild until smooth liquid. use three separate bowls, one for flour, one for egg batter, one for bread crumbs. Coat each part of the lobster meat first in flour, eggs, then bread crumbs, shaking off excess crumbs and put aside. 

in a large skillet over medium heat, add oil and let it get hot, about 2 minutes. Carefully add the breaded lobster  and let it cook for 5 minutes, then turn with tongs for another 5 minutes. Now, trans fer the lobster to a plate lined with a paper towel and set aside.

Add remaining ingredients to pan and saute for about 8 minutes, stirring occassionally. Lower heat, add lobster and let simmer for about 10 minutes, turning twice.

Serve with you favorite pasta, or with veffies and potatoes. ENJOY!!!



AUNT LIL'S CHOCOLATE CHIP CHEESECAKE


4-8- OZ PACKS CREAM CHEESE

3-16 OZ SOUR CREAM

6-EGGS

2-CUPS SUGAR

1- LEMON

1-STICK BUTTER

1-TBSP VANILLA EXTRACT

8- OZ GRAHAM CRACKER CRUMBS

1/2-CUP CHOCOLATE CHIP MORSELS

1-11 x 3 SPRING FORM PAN


let cream cheese and sour cream stand at room temp for about 6 hours.

Coat entire inside of pan with butter, then melt remaining butter and set aside. Put about 2-oz crumbs inside pan and cover the bottom and sides by rotating the pan on the side. in a large bowl, add remaing crumbs and butter and mix well, then spread the mixture on pan bottom and spread evenly, then pat down the crumbs with your hand.

In a large mixing bowl, add all ingredients except sour cream and chips, use an egg beater until mix is creamy smooth. Add the chips and SPOON the sour cream in using a spatula, not the egg beater. Mix the sour cream until evenly distributed, then pour into pan, leaving about 1/2 inch from the top. bake in preheated oven at 350 for about 45 minutes, then chek if the cake has "cracked", which is all good. If not cracked, then continue baking for about another 15 minutes. If it hasn't cracked by now and it is getting a little brown around the edge, remove from oven and let sit on a cooling rack for about an hour. Now refridgerate over night to let the cake "SET"
